His restaurant has also been named as the most sustainable one in the world, by the same list, and the Best Restaurant in Europe according to OAD (Opinionated About Dining). Eneko Atxa developed and deployed his great creative capacity at the Azurmendi culinary complex. His passion and awareness, cultural roots, ties with his setting and local sourcing, and the recipes of Basque traditional cuisine have and continue to underpin each of his creations. He is driven by a desire to create pleasure, achieve excellence, generate value, share wealth and knowledge, in short, to design a very personal experience and create in a sustained and sustainable manner.
His cuisine is the perfect trilogy of taste, texture and aesthetics with an exquisite mastery of the stocks. Home cooking, stews and his roots can be glimpsed in the composition of each dish as the solid base on which he constructs textures and works the product. The strength of each dish comes from Eneko’s very DNA, from his roots, from the genuineness of the traditional flavour, as he seeks to season it with what he calls power to the square. A cuisine that talks to rather than shouting at you, in a silent flaunting of harmony and sustainability.
